If you're looking for kid friendly, healthy food, these air fryer homemade taquitos are going to be on your dinner table time and time again. Along with pizza bagels, meatballs and chicken nuggets of course!

I'm not sure why repurposing, repositioning, and renaming food makes it kid friendly.  But for some reason, when I think like a kid, they are way more open to try (and even liking!) the new foods I make for them.

To make this recipe a family friendly hit, I took basic flavors and ingredients I know my family likes (cheese, ranch, chicken) and made them into a new shape. They are fun to eat and supremely delicious!

    • Quick to make - air fryer taquitos can be assembled, baked and on the table in less than 20 minutes.
    • Simple ingredients!

Ingredients You Need to Make This Recipe:

Here are the ingredients you need to make this recipe. Reference the recipe card at the bottom for exact measurements and the notes below for substitution ideas.

    ingredients for this recipe
    • Flour tortillas: I've also used the lower carb tortillas from Trader Joe's for these and they worked great. I tend to use flour tortillas rather than corn tortillas since they are easier to roll.
    • Rotisserie chicken: You can also use cooked shredded chicken, however rotisserie chicken is the easiest option if you are looking for a quick solution.
    • Ranch seasoning: I used Simply Organic Ranch for this recipe. You can also use their Southwestern Ranch seasoning.
    • Greek yogurt: dairy free plain yogurt, vegan yogurt or sour cream also work.
    • Carrots: use any veggie you would like or omit. I used carrots because of their mild flavor and appearance.

    How to Make This Recipe:

This is a step by step walkthrough of how to cook this recipe. Exact cook time and temperatures are available in the recipe card at the bottom.

    steps for making this recipe
    • Steps 1 and 2: Start by mixing up the ranch seasoning and Greek yogurt. Add in the shredded cheese and carrots followed by mixing in the chicken.
    • Step 3: I like to use a small cookie scoop to add little dollops of the chicken mixture to the tortilla. Tightly roll each tortilla and seal.
    • Step 4: Place tortillas seam down into the basket and get ready to air fry!

    Expert Tips

    • Storage: Store leftover air fryer taquitos in an airtight container in the refrigerator for up to 3 days.
    • Freezer: Homemade taquitos may be assembled ahead of time and placed in a freezer safe container. Freeze for up to 3 months and make them baked straight from frozen - no need to thaw.
    • Assembly: When assembling homemade taquitos, be sure to mix the chicken with the Greek yogurt dip.  Don't layer them in the tortilla, the chicken will dry out.
    • Make Ahead: Ingredients may be assembled for up to 1 day prior to air frying. You may consider rolling the day of to ensure the tortillas do not get soggy.
    • Reheating: Air fry leftovers for about 3-5 minutes at 370F for 3-5 minutes or until heated through.
    • Vegetarian: Substitute chicken for black beans, pinto beans, tofu or tempeh.
    • Vegan: Use vegetarian meat suggestions as well as vegan yogurt and cheese. Ensure that your ranch seasoning is vegan also.

    FAQs

Can I make these straight from frozen?

Air fryer taquitos can be made straight from the freezer by adding an additional 3-5 minutes per side or until heated through.

How can I make sure they don't all apart?

Do not overstuff as that makes the homemade taquitos harder to roll and they do not heat through thoroughly.

Spray the end of the tortilla with a bit of cooking spray to seal the taquito. Also, ensure that you place them seam-side down in the basket.

How long and at what temp do I cook them for?

Frozen needs to be cooked for 11-13 minutes per side at 370F. Cook fresh air fried taquitos for 8 minutes per side at 370F.

I usually use the taco-sized but you can use whatever you have on hand. Smaller ones may take a little less time and burrito-sized ones may take longer. Hope that helps!

Do you think sour cream would be an ok substitute for the greek yogurt to try and cut out more carbs?

Did you mean ranch dressing dip in step one, not Greek yogurt dip? If so, what do we do with the yogurt?

the Greek yogurt dip is made with ranch dressing mix and Greek yogurt then mixed together with the other ingredients. You will use half in the rollups and can reserve half for later use. Hope that helps!
