Smashed Little potatoes are an easy side dish your family will love! Crispy potatoes topped with spices, fresh herbs, and tomatoes. Roasted to golden perfection oh so flavorful!

Why This Recipe Works:
- Little Potato Company has different varietals of little potatoes to use for this recipe. I love using their Blushing Belle potatoes.
- These smashed Little potatoes are super easy to make with simple ingredients.
- Make this recipe ahead and crisp them in the oven when you are ready to eat.
What You Need to Make This Recipe:
- Little potatoes by The Little Potato Company: perfectly sized, easy to cook in the oven, microwave or grill and available at Walmart! Blushing Belle is my favorite Little potato varietal.
- Pesto or Basil: I like to mix the steamed potatoes with basil pesto and top with fresh basil for serving.
- Olive Oil: Pesto or basil olive oil is preferred but you can use extra virgin olive oil as well.
- Garlic: Grate some fresh garlic over these, and you’ll get loads of flavor plus an extra crisp!
- Tomatoes: Cherry tomatoes work well with this recipe because of their sweetness and lower water content.
- Seasonings: Salt & pepper or your favorite Italian or Mediterranean season blend work well for this recipe
How to Make This Recipe:
Bring a pot of salted water to boiling and cook potatoes for about 20 minutes or until you can pierce them with a fork. Drain them and allow to sit in the colander for about 5 minutes to steam.
Transfer boiled potatoes to a baking sheet and preheat the oven to 390F. If using pesto, spread on warm potatoes along with olive oil. Using a potato masher or fork, smash potatoes until about ¼ thick.
Season with salt & pepper, add tomatoes and bake at 390F for 45 minutes or until crispy. Top with parmesan cheese and extra basil if desired.
Expert Tips
- To reheat: You can make this recipe ahead of time and re-heat them on a sheet pan or baking dish at 390F for 10 minutes. These smashed red potatoes are so crispy, even reheated!
- To store: Store in an airtight container for up to 4 days in the refrigerator.
- Grate garlic over the potatoes prior to roasting for a bold garlic flavor.
- Try these in the air fryer! Follow the same directions as the oven preparation, but use the air fryer for final roasting and flip halfway.

- 1 1.5 pound bag Little Potato Company potatoes Blushing Belle, preferred
- 1 cup cherry tomatoes
- 2 large garlic cloves
- ⅓ cup basil pesto optional but recommended
- 2 tablespoon olive oil more if needed
- 2 tablespoon basil chiffonade
- salt & pepper to taste
- Parmesan cheese for topping, optional
Instructions
