This recipe appealed to me precisely because it does not have onion, tomato or jalapeño! My husband HATES onion and tomato, and as I was making this for a potluck, any extra would be coming home, and I didn’t want to be the only one eating it! Anyways, I did end up putting cilantro in it, simply because I had already bought some, and I enjoy the flavor it imparts. This recipe was so simple and delicious, and there wasn’t much left to bring home!
