- Carne Asada: I used my Instant Pot Carne Asada recipe for this quesadilla. You can also use this recipe to it on the stovetop if you don't have an Instant Pot.
How to Make This Recipe
Below are step-by-step instructions for how to cook this recipe. The recipe card at the bottom shows the exact cooking time and temperatures.
- Heat a griddle or skillet over medium heat. For each tortilla add 1 serving of cooked meat to one side of the tortilla and cover with ⅛ cup cheese.
- Add the remaining ⅛ cup cheese to the other side of the tortilla and fold the cheese-only side over the steak side.
- Allow the quesadilla to cook for 2-3 minutes or until nicely browned on the bottom.
- Flip and cook another 2-3 minutes or until the cheese is melted and the tortilla is golden brown.

- Reheat: Reheat meat in the microwave or on the stovetop.
- Storage: Leftovers should be stored separately as storing them together may cause the tortillas to become soggy. Store leftovers in an airtight container for up to 3 days in the refrigerator.
- Make ahead: To make this recipe ahead, you can cook the meat and store it in the refrigerator for up to 3 days prior to making the carne asada quesadilla. Reheat in the microwave or on the stovetop prior to making the quesadilla.

Ingredients
- 4 servings carne asada use leftover steak or our carne asada recipe
- 4 burrito-sized flour tortillas
- 1 cup shredded Mexican blend cheese
- ½ cup salsa
- lime for serving
- cilantro for serving
Instructions
- Heat a griddle or skillet over medium heat. For each tortilla add 1 serving cooked carne asada to one side of the tortilla and cover with ⅛ cup cheese.
