    This carne asada quesadilla recipe is a quick and easy way to use leftover steak or to make from scratch at home! The delicious Mexican flavors make a filling and nutritious meal in less than 10 minutes! No marinating time!

    Taco night happens all the time in my house! If I'm not craving chicken burrito bowls then it's a delicious carne asada quesadilla like this one!

    Full of flavor and simple ingredients, this recipe is super filling and flavorful. You can use leftover steak or make it the easy way - in your Instant Pot!

    If you love quesadillas as much as we do you have to try this Italian version, chicken taco recipe and air fryer veggie version!

    • Carne Asada: I used my Instant Pot Carne Asada recipe for this quesadilla. You can also use this recipe to it on the stove top if you don't have an Instant Pot.

    How to Make This Recipe

    This is a step by step walkthrough of how to cook this recipe. Exact cook time and temperatures are available in the recipe card at the bottom.

    1. Heat a griddle or skillet over medium heat. For each tortilla add 1 serving cooked meat to one side of the tortilla and cover with ⅛ cup cheese.
    2. Add remaining ⅛ cup cheese to the other side of the tortilla and fold cheese-only side over steak side.
    3. Allow quesadilla to cook for 2-3 minutes or until nicely browned on the bottom.
    4. Flip and cook another 2-3 minutes or until cheese is melted and tortilla is golden brown.

    Expert Tips

    • Reheat: Reheat meat in the microwave or on the stove top.
    • Storage: Leftovers should be stored separately as storing together may cause the tortillas to become soggy. Store leftovers in an airtight container for up to 3 days in the refrigerator.
    • Make ahead: To make this recipe ahead, you can cook the meat and store it in the refrigerator for up to 3 days prior to making the carne asada quesadilla. Reheat in the microwave or on the stovetop prior to making the quesadilla.

    Ingredients

    • 4 servings carne asada from "Instant Pot Carne Asada Recipe"
    • 4 burrito-sized flour tortillas
    • 1 cup shredded Mexican blend cheese
    • ½ cup salsa
    • lime for serving
    • cilantro for serving

    Instructions

    • Heat a griddle or skillet over medium heat. For each tortilla add 1 serving cooked carne asada to one side of the tortilla and cover with ⅛ cup cheese. Add remaining ⅛ cup cheese to the other side of the tortilla and fold cheese-only side over steak side.
    • Allow quesadilla to cook for 2-3 minutes or until nicely browned on the bottom. Flip and cook another 2-3 minutes or until cheese is melted and tortilla is golden brown.
    • Serve with salsa and a squeeze of lime. Sprinkle with cilantro if desired.
