I recently got a brand new air fryer and ever since it’s gotten very little time off. The air fryer has made my meal prep so much easier! I love that I don’t have to preheat it and everything comes out tasting delicious, like it roasted for hours!
One of my favorite things to eat for lunch has been air fried veggies and seafood with a side of Trader Joe’s cauliflower gnocchi. I’ve definitely upped my veggie intake since I started air frying!

Not surprisingly, this chicken is super crispy! By using less oil it becomes a healthy fried chicken recipe.

The secret to the flavor of this healthy crispy air fryer chicken recipe is… the breading process!
I use a pancake mix – egg wash – breading sequence that seals in the moistness and the flavor.
Also – the combination of panko breadcrumbs and homemade breadcrumbs makes the perfect crispness to flavor factor.
How to Make Homemade Breadcrumbs to Coat Air Fryer Chicken
I like to collect the heels of bread and freeze them until I’m ready to make a batch of homemade breadcrumbs. You can also use bread that is old or going stale.
The steps to make homemade breadcrumbs are:
- Preheat oven to 300F.
- Process bread in a food processor until you get small, breadcrumb sized pieces.
- Place breadcrumbs on an ungreased cookie sheet and bake for 3 minutes. Shake pan to loosen bread crumbs and bake for a few minutes longer or until crumbs are lightly browned and crispy.

How to Use Your Air Fryer
- You can open the cooking chamber and shake the pan for even cooking.
- Spray your tray and food with a little bit of olive oil (even if it doesn’t say to!)
- Cook food in one layer to make sure both sides get crispy.
- Don’t air fry wet food! Check out the recipe below for how I make sure the chicken is dry.
- Don’t overcook! The air fryer can dry food out if you cook it for too long.

This always depends on the thickness of the chicken breast. I recommend butterflying or pounding your chicken breasts down before air frying them.
You will want to ensure that chicken is cooked to 165F using an instant read thermometer. Start with four minutes per side and continue cooking until fully cooked.
I can’t overemphasize the need for an instant read thermometer. Relying on time instead of temp will equal dried out chicken – and no one wants that!
I like to air fry my chicken on the low end and then add time once I’ve gotten a good read on my instant read thermometer.

Breaded Air Fryer Chicken Breast Recipe
This is my favorite healthy crispy chicken recipe, ever. I make it weekly and have used it to make air fryer chicken Parmesan, healthy crispy chicken salads, chicken biscuit breakfast sandwiches and more!
Healthy Crispy Parmesan Air Fryer Chicken
Best healthy Air Fryer crispy chicken recipe made with Parmesan cheese and chicken cutlets. healthy fried chicken for a weeknight meal that is a family friendly and kid friendly chicken recipe
- 1.5 pounds chicken breast butterflied
- 2 cups panko bread crumbs or make your own (see recipe in post)
- 1 egg
- 1/2 cup Kodiak Cakes Flapjack Mix
- 1/2 tsp salt divided
- 1/2 tsp onion powder divided
- 1/2 tsp pepper divided
- 3/4 tsp paprika divided
- 1/4 cup parmesan cheese
To begin cooking the air fryer chicken breast, preheat Air Fryer to 390F. Spray roasting pan with olive oil spray.
Trim chicken breast of excess fat. Be sure to butterfly chicken breasts or pound to no thicker than 1/4 inch. This is an important step to make sure the chicken cooks thoroughly.
Measure out breadcrumbs and Kodiak cake mix into two separate bowls. Season breadcrumbs and Kodiak cake mix evenly with spices. Add parmesan cheese to the breadcrumb bowl. Put egg in third bowl and scramble with a fork. Line up the bowls in order of Kodiak Cakes mix, egg, breadcrumbs.
Dredge chicken in flour then dip and coat into eggs. Coat with breadcrumb mix on all sides.
Place chicken in air fryer and cook at 390F for 4 minutes. Flip and cook for 2-4 minutes depending on thickness of chicken. Chicken is cooked at 165F and is best determined with a meat thermometer. Cook until done.
Serve with pizza sauce and extra parmesan for a delicious meal!
