When I'm trying to watch my food budget or focus on eating better ingredients, making DIY copycat recipes at home is a priority. These homemade egg bites use ingredients that are simple and healthy compared to Starbucks and Dunkin.

- Eggs: The recipe calls for full eggs (yolks and whites.) You can also use just egg whites, however be sure to thoroughly whisk them prior to adding. I have not tested it with liquid eggs, Just Egg, liquid egg whites, or Egg Beaters.
- Bacon: Pork bacon, turkey bacon, crumbled sausage, and ham all work. For vegan or vegetarian, omit the meat or use a plant-based meat alternative.
- Wilted spinach: Wilted kale, arugula, or collard greens all work. Frozen spinach also works - be sure to drain it of all moisture before adding.
- Cheese: You can use dairy-free cheese or cheese like gruyere, goat cheese, or feta.
- Equipment needed: You will also need a pressure cooker such as an Instant Pot or Ninja Foodi and a silicone egg mold.
How to Make This Recipe
This is a step-by-step walkthrough of how to cook this recipe. The recipe card at the bottom shows the exact cook time and temperatures.
Step 1
Spray egg bite mold with coconut oil spray. Place bacon and spinach into egg bite mold. Whisk eggs and everything bagel seasoning in a small bowl.
Step 2
Pour egg mixture evenly over bacon and spinach. Sprinkle cheese evenly over the top.
Step 3
Add one cup of water to Instant Pot and place egg bite mold onto the trivet. Carefully lower the trivet into the pot.
Step 4
Cook on steam mode for 9 minutes and then 10 minutes of natural release. Serve hot or store for up to one week in the fridge. Note: Egg bites will naturally deflate a bit after cooking.

- Freezing: Can be frozen, however, I personally do not like them this way so my personal opinion is that freezing is not recommended.

Ingredients
- 5 large eggs Vital Farms recommended
- 1 tablespoon cheese dairy free if needed
- 1 cup spinach wilted and chopped
- 3 slices bacon cooked and chopped
- ½ teaspoon Everything Bagel Seasoning
Instructions
- Spray egg bite mold with coconut oil spray. Place bacon and spinach into egg bite mold.3 slices bacon, 1 cup spinach
- Whisk eggs and everything bagel seasoning in a small bowl and pour evenly over bacon and spinach. Sprinkle cheese evenly over top.1 tablespoon cheese, ½ teaspoon Everything Bagel Seasoning, 5 large eggs
- Add one cup of water to Instant Pot and place egg bite mold onto trivet. Carefully lower trivet into pot.
- Cook on steam mode for 9 minutes and then 10 minutes natural release. Serve hot or store up to one week in the fridge.
Oven Directions
- Preheat oven to 350F.
- Follow Instant Pot instructions through step 2. Note: When making them in the oven you can use the mold or a muffin tin sprayed with cooking spray or lined with silicone liners.
- Bake at 350F for 15-20 minutes or until eggs are set.
