Ingredients & Substitutions
Here are the ingredients you need to make this recipe. Reference the recipe card at the bottom for exact measurements and the notes below for substitution ideas.
- Eggs: The recipe calls for full eggs (yolks and whites.) You can also use just egg whites, however be sure to thoroughly whisk them prior to adding. I have not tested it with liquid eggs, Just Egg, liquid egg whites, or Egg Beaters.
- Bacon: Pork bacon, turkey bacon, crumbled sausage, and ham all work. For vegan or vegetarian, omit the meat or use a plant-based meat alternative.
- Wilted spinach: Wilted kale, arugula, or collard greens all work. Frozen spinach also works - be sure to drain it of all moisture before adding.
- Cheese: You can use dairy-free cheese or cheese like gruyere, goat cheese, or feta.
- Equipment needed: You will also need a pressure cooker such as an Instant Pot or Ninja Foodi and a silicone egg mold.

Expert Tips
- For super fluffy homemade egg bites use full-fat coconut milk for dairy-free or make with dairy milk if desired. Start with ¼ cup and add more as desired.
- High protein: For added protein and creaminess, add ¼ cup of cottage cheese or plain Greek yogurt to mixture prior to cooking.
- Veggie: For a veggie-packed homemade egg bite, add in cooked mushrooms, tomatoes and or red peppers.
Storage, Reheating, Make Ahead & Freezing
- Storage: Store leftover homemade egg bites in the refrigerator in an airtight container for up to 3 days.
- Serving: Serve hot once they are done cooking for the most fluffy egg bite.
- Reheating: The easiest way to reheat them is by microwaving them. Start with 30 seconds and add in 10 second increments until heated to your liking.
- Make-Ahead: Can be made ahead then stored in the refrigerator for up to 3 days.
- Freezing: Can be frozen, however, I personally do not like them this way so my personal opinion is that freezing is not recommended.

Sandra
You mention the use of coconut milk but I don't see where it appears in the actual recipe. Is it optional?
Lyndsey Piccolino
It's not in the actual recipe, just a suggestion for making them even fluffier or if you want them to be dairy-free.
Niki
Do you have a measurement for the coconut milk?
(I added nutritional yeast too for a cheesy flavor but apparently not enough.)
Lyndsey Piccolino
I generally start with 1/4 cup and go from there.
