- Eggs: I used Vital Farms pasture raised eggs for this recipe. You can also use egg whites if you prefer, however be sure to thoroughly whisk them prior to adding. I have not tested it with liquid eggs, liquid egg whites or Egg Beaters.
- Bacon: I recommend ButcherBox bacon. You can also add in crumbled sausage, ham or any other type of meat you like. Meat can be omitted to make recipe vegetarian and meatless or you can use plant based meat.
- Spinach: You can also choose another veggie like kale, arugula or collard greens. Be sure to wilt your spinach before adding to egg mold. Frozen spinach also works - be sure to drain it of all moisture before adding.
- Cheese: You can use dairy free cheese or regular cheese (gruyere is my favorite).
- Milk: To keep recipe dairy free, use full fat coconut milk (optional but recommended for creamy eggs). Dairy milk may be used if desired.
- Equipment needed: You will also need a pressure cooker such as an Instant Pot or Ninja Foodi and a mold.
