Ingredients and Substitutions
Here are the ingredients you need to make this recipe. Reference the recipe card at the bottom for exact measurements and the notes below for substitution ideas.
- Kodiak Cake mix. Any kind of Kodiak cake mixes work, but I prefer Kodiak buttermilk power cakes for making this Kodiak Cakes waffle recipe. I have not tried other brands of waffle mixes.
- Unsweetened almond milk. Use original or unflavored almond milk for savory or sweet waffles. Unsweetened vanilla almond milk works for sweet recipes.
- Coconut oil. Substitute butter if needed. Use refined coconut oil for no coconut flavor.
- Cinnamon. Cinnamon adds a small amount of spice and delicious flavor. Substitute pumpkin spice if desired.
- Protein powder. An optional ingredient but will add more protein. Use your favorite protein powder or collagen protein powder.
How to Make These Kodiak Waffles
Below are step-by-step instructions for how to cook this recipe. The recipe card at the bottom shows the exact cooking time and temperatures.
- Heat a large waffle iron (like a Belgian waffle maker) and spray it with coconut oil spray or cooking spray.
- Add Kodiak cakes mix to a large bowl. Stir in cinnamon, collagen protein powder, and any other mix-ins. Stir in almond milk until well mixed but do not over mix.
- Evenly pour ¾ of a cup of waffle batter on the hot iron. Close the waffle iron and allow the waffle to cook for a couple of minutes (usually 3-5 minutes.)
- The Kodiak cakes waffles are cooked when they are golden brown waffles. Use a fork to carefully remove them from the hot waffle iron.
Recipe Variations
- Add in your favorite waffle mix-ins like chocolate chips, blueberries, or nuts.
- Stir in chia seeds for healthy fats and added protein.
- Add in egg whites for more protein and an even fluffier waffle.
- Favorite toppings like maple syrup, butter, powdered sugar, and fresh waffle toppings like sliced strawberries or other fresh fruit all work well.
- For a sweeter waffle, add in 1 tablespoon of brown sugar.
- Make a savory protein waffle by stirring in some cooked bacon or sausage and some shredded cheddar cheese into the waffle batter.
Expert Tips
- For the best results, spray the waffle iron very well to avoid sticking.
- The waffle batter will thicken as it sits. If it needs more milk after sitting, stir in 1 tablespoon of almond milk at a time. If the mix is too thin, allow it to sit for a few minutes to thicken.
- If using mix-ins, stir them into the batter in the bowl to avoid them burning on the waffle iron.
- Allow the kodiak cake waffles to cool to room temperature before storing.
- Store leftover waffles in an airtight container in the refrigerator for 3-4 days.
- Freeze in a freezer-safe container for up to 3 months.
Recipe FAQs
Freezing waffles are a great way to make a healthy breakfast ahead of time.
To make ahead to freeze, follow the recipe card as written. Allow the waffles to cool to room tempterature. Place waffles on a baking sheet lined with parchment paper.
Put the baking sheet in the freezer for about one hour or until the waffles are solid. Place them in a freezer-safe container and store frozen for up to 3 months.
