Healthy desserts like these no bake treats are a speciality around here! In fact, this recipe was based upon one of my favorite desserts, chickpea cookie dough.
The base for this treat is so simple you can make any flavor you like including birthday cake, lemon, sugar cookie or chocolate!

What Makes This Recipe Work

- Forget Betty Crocker, Ben and Jerry's and even the packaged candy version! These balls are made with super simple, wholesome ingredients that you probably already have on hand.
- Make them chocolate covered or not. They are easy and quick to make both ways.
- Adaptable! You can make different flavors or even add in some protein powder to give them and extra protein punch.
- No flour to heat, no milk and no eggs - no need to worry about eating raw ingredients and perfect for gluten free, grain free, dairy free and egg free diets.
Ingredients
Here are the ingredients you need to make this recipe. Reference the recipe card at the bottom for exact measurements and the notes below for substitution ideas.
- Chickpea cookie dough - the original recipe that inspired this chocolate dipped version.
- Melting chocolate - I use Enjoy Life chips to make the recipe dairy free and vegan, but you can use whichever melting chocolate you prefer.
- Coconut oil - optional but I do find that it helps the chocolate to melt to a great dipping consistency. Feel free to use refined coconut oil if you do not care for coconut flavor.
Instructions
Below are step-by-step instructions for how to cook this recipe. The recipe card at the bottom shows the exact cooking time and temperatures.
- Mix up a batch of chickpea cookie dough and place it in the freezer for 10 minutes.
- Use a small cookie scoop to scoop out approximately 20 small balls.
- Melt chocolate and coconut oil if desired in the microwave until smooth and easily drips from a spoon.
- Place bites into chocolate and move around with spoon until covered. Place balls on a parchment-lined plate and freeze for 10 minutes before storing in an airtight container in the refrigerator.

- Storage: Store hardened bites in an airtight container in the refrigerator for up to 5 days.
- Freezer: They can be stored in a freezer-safe container for up to 3 months. Allow balls to thaw for about 5-10 minutes in the refrigerator prior to eating.
- Flavor adaptations: This recipe has the basic chocolate chip cookie flavor. You could also make it using sweet potato brownies, birthday cake, or even experiment with flavors like lemon or cookies and cream.
- To make nut-free replace almond or peanut butter in the original chickpea cookie dough recipe with sunflower butter or another nut-free butter option.

This recipe is 100% vegan and egg free making it completely safe to eat. No raw eggs!
The chickpea cookie dough makes it quite thick on its own and easy to make into no bake cookie dough bites. I tend to freeze my chickpea cookie dough for 10 minutes prior to rolling to make scooping the balls just a bit easier.
They can be stored in the freezer for up to 3 months. If you do decide to freeze them allow them to thaw for about 5-10 minutes in the fridge prior to eating.
I've found the taste and texture straight from the freezer is not nearly as good as from the refrigerator.
I use a small cookie scoop to easily roll the dough into balls. Scoop the dough into the scooper and then use your hands to roll a ball.
Chilled dough (frozen for about 10 minutes) will help to easily roll the balls.
