- Pancake Mix: This pancake in a mug recipe was tested with Kodiak Cakes Buttermilk Waffle and Flapjack Mix. I have not tested it with Bisquick, Birch Benders, Krusteaz, or other pancake mixes.
- Stevia: You can swap stevia for honey or maple syrup or omit if using a sweetened protein powder.
- Optional Toppings: My favorite topping combination is peanut butter and chocolate chips. Blueberries, apples, or banana bread are also delicious toppings.
- Optional Vanilla Protein Powder: I make this recipe with protein powder to make it a high protein mug pancake. I used Orgain vanilla protein powder which is sweetened with stevia. If using a sweetened protein powder, you may consider reducing the stevia drops.

Might want to mention to use more liquid, i.e. water or almond milk, if you use a scoop of protein powder. I tried using just 1/2 cup, wasn't enough. It turned out thick and very dry.

You are right Koi, it does depend on the protein powder you are using. I've never had an issue with Orgain that I use, but depending on the brand it could need more liquid. Thanks for your input.
