- In a large bowl, combine all of the pumpkin cookie ingredients and mix until combined.
- Use a medium cookie scoop to scoop out 6 cookies onto a large baking sheet lined with parchment paper. Use two cookie sheets or bake two batches if needed. Bake in a preheated oven at 350F for 10-12 minutes or until the cookies are baked through. Cool on a wire rack before serving.
