One of the hardest things about starting a new healthy routine is making it stick long-term!  I don’t know about you but when someone puts restrictions or a bunch of rules around what I have to eat or do, I rebel!  I like to find solutions that are purposeful and NOT extreme.  Small steps lead to progress, which leads to action, which leads to results!

The search for dairy alternatives

One of the things our family has decided to do is to reduce our dairy intake.  My hubby recently developed a lactose intolerance so it put me on a search to find delicious products that reduce our dairy but still taste great!  He was reluctant about the swap, but was pleasantly surprised at what we found.  When we upped the plants and reduce the dairy, I think we were all pretty pleased!

Silk Omega-3 and Prebiotics Almond & Cashewmilk was a really awesome find for us.  Not only can we use it in the yummy plant based breakfast recipe I’m going to share with you below, but my hubby can also make small steps to replace dairy in his coffee with a splash of Silk Almond cashewmilk. One of the things I love most about Silk Almond Cashewmilk Omega 3 and Silk Almond Cashewmilk Prebiotics is that they only have 3 grams of sugar per serving and 50% more calcium than dairy milk.

A change in lifestyle doesn’t have to be extreme.  And, eating plant-based has been surprisingly tasty!  Don’t be afraid to try something new.  I’ve been pleasantly surprised at how full I feel after eating more plant-based meals.

Plant Based Breakfast {Berry Quinoa Parfait}

In our quest to find something filling and lightened up, but also dairy free, I created one yummy plant based breakfast!  Instead of the traditional oats for an overnight jar, I swapped out oats for quinoa.  Quinoa has 8 grams of protein for cup and it’s gluten free.  This plant based breakfast combines the protein of quinoa with the antioxidant power of berries, and the dairy free benefits of Silk Almond & Cashewmilk.


2 cups cooked quinoa
Silk Almond Cashewmilk Prebiotics or Silk Almond Cashewmilk Omega 3
Silk Almondmilk Yogurt
Fresh Berries, sliced


Cook quinoa according to package instructions.  Divide between two mason jars.  Drizzle a coating of Silk Almond Cashewmilk Prebiotics or Silk Almond Cashewmilk Omega 3.  Add a dollop of Silk Almondmilk yogurt.  Top with fresh berries and put in the fridge overnight.  Can be enjoyed warm or cold.
Vegan Breakfast Ideas
Start with two mason jars and 2 cups of cooked quinoa.  Split quinoa between the two jars.  Add a drizzling of Silk Almond Cashewmilk Prebiotics or Silk Almond Cashewmilk Omega 3 to coat the quinoa.

Top the quinoa mixture with a 1/2 container Silk Almondmilk yogurt.

Super easy!  You’ll have a yummy plant based breakfast waiting for you in the morning.  You can eat it warmed up or cold!

    I love berries and yogurt for breakfast! Your berries look so lush and plump in these photos, very appealing. I will have to try your recipe, as I’ve never used quinoa this way.

    I’m totally like you and if someone restricts what I can eat, I want that one item that much more! Haha, but this totally looks like a healthy alternative I could get on board with. Silk is my favorite “milk” and this recipe definitely looks like something I could handle. 🙂

    I have never ever thought of having quinoa for breakfast! I’ve never been a person for eggs, and I like to keep my breakfast fairly light. This sounds like a really great option!

    This is really helpful! I’m also lactose-intolerant and am always on the lookout for dairy-free products. I tried Silk many years ago, but I think it’s time I try them again!

    These look so delicious!! I love having fresh berries in our home. We’re currently waiting on our tax refund to hit our bank account so we can do a giant grocery trip. These will be at the top of my list! haha

    My family has recently been making the same transition away from dairy. The kids still eat regular greek yogurt and ultra-filtered milk, but we’ve added a lot more dairy free choices. We love Almond milk! I haven’t tried these yet but I’m definitely going to try them now. :0) Thanks for sharing!

    My husband and I have fallen in love with these. I put them in small jars because that’s what I have and he’s always looking for one in the fridge. I’ve made them various ways, with all kinds of non dairy yogurt including lemon! And I always add walnuts for that extra boost. Thanks for the idea!
