- Sweetener: I used honey for this recipe, however you can use maple syrup to make it vegan or monk fruit sweetener to make it low carb or more keto friendly. Sugar is also an option and make it without sugar or other sweetener if the berries are sweet enough.

- Wash, de-stem and cut berries in half.
- Add washed berries to a food processor along with honey and lemon juice. Process on high for 60 seconds. Use a fine mesh sieve to remove any seeds and larger chunks if desired.

- To make without seeds: Use a fine mesh sieve to push the puree through and remove as many seeds as possible.
- To make strawberry compote or sauce: To make a thick, more compote version, do not process to smooth, you will want a few chunks. For sauce you will want to process for the full 60 seconds. Use cornstarch to thicken the mixture.
- To make jam: Use gelatin to thicken the mixture to more of a jam and allow time for it to set up in the fridge prior to consuming.
- For a mimosa-style strawberry puree, try adding in champagne or prosecco for a fun twist!
