Easy Baked Chicken Recipes for Fall {Healthy Sheet Pan Dinner}
This sheet pan dinner recipe is one of my favorite easy baked chicken recipes full of delicious fall flavors. This 30 minute meal is great for weeknights.

One of my most popular recipes over on Instagram is a chicken recipe. Does anyone else have a serious chicken obsession or is it just me? Baked, air fried, crockpotted, you name it and I could eat it. Chicken is my thang.
So it makes sense that chicken would be a usual menu item for us. Except when I forget to defrost it - which may or may not happen more frequently than I would like! That lack of planning totally kills my chicken mojo.
One of the things that totally kills my healthy eating plan during back-to-school and the fall is a lack of planning! Or lack of time - that's even worse!
School starts and the madness begins! I find myself trying to create a more elaborate meal plan and end up failing. Has this ever happened to you?
The trick to eating healthy when you are busy is to have a few fool-proof, easy recipes on hand. I've realized that my crockpot and instant pot are my best friends during busy times of the year.
I also love one pot meals and healthy one pot suppers to create something that is simple to make and easy to clean up. This recipe is one of my favorite easy baked chicken recipes that you can roast on one pan. Prepping this recipe is easy to do in the morning and throw in the oven for a quick dinner.
What You'll Need to Make a Sheet Pan Dinner
To make this easy baked chicken recipe you'll need the following items:
- Boneless, skinless chicken breasts: I prefer to purchase my chicken in bulk from stores like Costco and freeze it so I have the chicken available to me whenever I need it. You can also use fresh chicken breast.
- Olive oil: Avocado oil would also be a great choice for the base of your marinade.
- Kosher Salt & Pepper: I like to season my chicken breast before putting them in the marinade.
- Minced garlic: You can either minced fresh garlic yourself or use the pre-minced garlic that comes in a jar. One way to get stronger garlic flavor is to use a lemon zester to grate the garlic.
- Herbs: a variety of chopped herbs will make this chicken recipe super fresh. I used parsley and rosemary to give it a delicious fall flavor.

There are also a few tools of the trade that will be super helpful in making sure this sheet pan dinner recipe is cooked to perfection.
- An instant read thermometer - you'll want to make sure your chicken is fully cooked.
- A good sheet pan - I like to have a bunch of these on hand since I tend to destroy my pans when I roast meats.
- Herb scissors - these scissors are great for cutting herbs quickly.
- Marinade bags - these bags are great and sizable to fit all your chicken or other meat you marinade.
How to Make Easy Baked Chicken Recipes on a Sheet Pan
Step 1
Trim your chicken of excess fat. Place chicken, shallots olive oil, herbs and garlic into a marinade bag. Let chicken marinade for a few hours. If you can marinade overnight you will have the best infused flavor.
Step 2
Prepare your veggies you will be roasting. For this fall flavored dinner I chose roasted butternut squash and apples. Chop your veggies and/or fruit and coat them with a bit of olive oil. Season them with kosher salt and pepper. This step can be done in advance after you finish the chicken.
Step 3
Preheat your oven to 400 degrees. Spray your baking sheet with cooking spray. Add butternut squash and apples or other veggies and fruits to the pan. Add chicken to baking sheet and drizzle with any remaining marinade. I added a few sprigs of rosemary to the top of the butternut squash for added flavor.
Step 4
Roast for 20 minutes at 400 degrees. Flip butternut squash and apples at 20 minute mark. Roast for an additional 10-15 minutes or until an instant read thermometer reads 165F or chicken is fully cooked.
Step 5
Once cooked let chicken rest for a few minutes under tented foil.
How to store cooked chicken
If you are looking to store cooked chicken you can do so in the refrigerator for up to three days. You can also freeze chicken in freezer-safe containers for a healthy freezer meal for up to 3 months.
