Paleo Crock Pot Chicken Thighs

Paleo crockpot chicken thighs slow cooked with honey and garlic are deliciously tender!  This easy paleo slow cooker recipe is family friendly and better than take out!

Ingredients

  • 1 pound boneless chicken thighs
  • salt + pepper to taste

Sauce Ingredients

  • 2 teaspoon minced garlic
  • ½ cup Primal Kitchen ketchup
  • cup coconut aminos
  • ¼ cup raw honey
  • 1 teaspoon oregano

Instructions

  • Mix together sauce ingredients until smooth. Season chicken with salt and pepper and place chicken thighs into slow cooker. Pour sauce over the chicken.
  • Cook on high for 2-3 hours or low for 4-6 hours. Shred chicken and mix in cooked broccoli. Serve over cauliflower rice.

  • Serving:  Cauliflower rice is a great choice if you want to keep this recipe paleo friendly or grain free!  Here are some modification ideas for this slow cooked chicken thigh recipe!
    • Serve over white or brown rice instead of cauliflower rice.
    • Add in Sriracha or Thai chili paste or drizzle with some Thai chili oil  for a bit of heat.
    • Mix in some sesame seeds or drizzle with some sesame oil.
    • Use stir fry veggies instead of broccoli.
    • Mix in some chopped cashews or peanuts for some extra crunch.
    • Garnish with scallions or cilantro.
