Best HEALTHY Air Fryer Quesadilla

Air Fryer Quesadillas are a healthy weeknight dinner you can make so quick! Make it with veggies or add in some protein like rotisserie chicken or pulled pork. Your family will love this homemade recipe done in just about 20 minutes!

Ingredients

  • cup black beans rinsed
  • ½ large zucchini washed and cut into half moons
  • ½ large summer squash washed and cut into half moons
  • 4 mini peppers washed and julienned
  • 1 cup mushrooms washed and sliced
  • 1 tablespoon extra virgin olive oil
  • 1 tablespoon Everything But the Bagel seasoning or your favorite seasoning blend
  • 3 tortillas I used Mission Carb Balance for this recipe and nutrition information.
  • ¾ cup mozzarella cheese

Instructions

Pre-Cook Veggies

  • Start by seasoning the veggies with olive oil and everything but the bagel seasoning. Add to basket and cook at 400F for 15 minutes, shaking halfway.

Quesadilla

  • Lay your tortilla out on a flat surface and place veggies, beans and cheese on one side. Fold the other half of the tortilla over and carefully place the folded tortilla in the basket.
  • Air fry for 8 minutes at 350F, flipping halfway and checking the basket during the first few minutes of cooking to ensure the tortilla hasn't floated up. See expert tips for how to keep a tortilla down during air frying.

Notes

Note:  If you decide not to pre-roast the veggies the total cooking time cuts down from 23 minutes to 8 minutes.
Frequently check the basket during the first half of cooking. The tortilla tends to float up due to the air circulation. You can use a spatula to carefully pat it back down. Alternatively, try a toothpick inserted into each quesadilla or a rack to keep the tortilla down during air frying.
Timing will vary depending on your model. I tested this in the Ultrean.
Use a pizza cutter to easily cut your quesadilla into triangles or in half.
Spritz your quesadillas with some olive oil spray for a golden brown outside.
Additional Filling ideas: refried beans, rotisserie chicken, fajitas, pulled pork, steak, ham, shrimp, ground beef, buffalo or bbq chicken.
Topping ideas: Top with salsa, Greek yogurt or sour cream and guacamole.
