Easy Homemade Egg Bites (Keto and Gluten-free)

These easy homemade egg bites are a healthy breakfast recipe that is even better than Starbucks or Dunkin! Keto, gluten-free, and can be made in the Instant Pot or oven in just 30 minutes.

Ingredients

  • 5 large eggs Vital Farms recommended
  • 1 tablespoon cheese dairy free if needed
  • 1 cup spinach wilted and chopped
  • 3 slices bacon cooked and chopped
  • ½ teaspoon Everything Bagel Seasoning

Instructions

  • Spray egg bite mold with coconut oil spray. Place bacon and spinach into egg bite mold.
    3 slices bacon, 1 cup spinach
  • Whisk eggs and everything bagel seasoning in a small bowl and pour evenly over bacon and spinach. Sprinkle cheese evenly over top.
    1 tablespoon cheese, ½ teaspoon Everything Bagel Seasoning, 5 large eggs
  • Add one cup of water to Instant Pot and place egg bite mold onto trivet. Carefully lower trivet into pot.
  • Cook on steam mode for 9 minutes and then 10 minutes natural release. Serve hot or store up to one week in the fridge.

Oven Directions

  • Preheat oven to 350F.
  • Follow Instant Pot instructions through step 2. Note: When making them in the oven you can use the mold or a muffin tin sprayed with cooking spray or lined with silicone liners.
  • Bake at 350F for 15-20 minutes or until eggs are set.

Notes

  • Storage: Store leftovers in the refrigerator in an airtight container for up to 3 days.
  • Serving: Serve hot once they are done cooking for the most fluffy egg bite.
  • Reheating: The easiest way to reheat them is by microwaving them.  Start with 30 seconds and add in 10-second increments until heated to your liking.
  • Make-Ahead: Can be made ahead and then stored in the refrigerator for up to 3 days.
  • Freezing: Can be frozen, however, I personally do not like them this way so my personal opinion is that freezing is not recommended.
  • You can use egg white for this recipe, just be sure to thoroughly whisk the egg whites so that they separate and mix well in the egg mold.
  • Be sure to thoroughly spray the mold with cooking or coconut oil spray before adding your liquid egg mixture.  This will help your sous vide egg bites slide out easily.
  • If you have trouble getting them out of the mold, try a knife around the edge of the egg bite to loosen it from the side.
  • You can stack egg molds in the instant pot. This is a great way to make enough bites for your family and have breakfast prepped for the week.
