Crispy Greek Potatoes

These crispy Greek potatoes are made in the oven and are so crispy and delicious! Made with fresh and simple ingredients like lemon, feta, olive oil and homemade Greek seasoning, this easy recipe is the perfect healthy side for any main dish. Roasted to perfection in just 35 minutes!

Ingredients

  • 1 pound baby potatoes
  • 2 tablespoon olive oil
  • 5 cloves garlic roasted and chopped or grated
  • cup feta cheese
  • 1 teaspoon oregano
  • 1 teaspoon salt
  • ½ teaspoon pepper
  • juice of ½ lemon

Instructions

  • Clean potatoes and dry them.  Cut each in wedges.
  • Add potatoes to a large bowl and drizzle them with olive oil.  Season with salt, pepper and oregano.
  • Add your potatoes to a baking sheet sprayed with coconut oil cooking spray.  Roast at 400F for 30 minutes, flipping potatoes halfway through.  Toss with feta cheese and additional lemon juice and seasoning if desired

Notes

  • Storage: Store leftovers in an airtight container in the refrigerator for up to 3 days.
  • Cut them evenly. This will ensure that the potatoes cook evenly and crisp up.
  • Flip halfway through roasting. This will give that crispy skin on both sides.
  • Serve immediately or reheat in the oven or air frying. This will keep the outside skin as crispy as possible.
  • Air Frying Instructions: To make crispy Greek potatoes, follow directions as listed until roasting. Air fry at 400F for 15-20 minutes, shaking halfway through.
