Ingredients

Oatmeal Crust Layer

  • 2 1/2 cups gluten free oats
  • 1/3 cup Georgia Grinders pecan butter
  • 1/3 cup coconut oil
  • 1/4 cup coconut sugar
  • 1 tbsp coconut sugar for sugaring peach layer
  • 1 1/2 tsp baking soda
  • 1 1/2 tsp pure vanilla extract
  • 1/4 tsp sea salt
  • 1/8 - 1/4 cup oat or almond milk use as needed to bind crust

Peach Filling Layer

  • 3 large peaches finely diced
  • 1/2 tbsp lemon juice
  • 1 tsp pure vanilla extract
  • 1/2 tsp arrowroot

Instructions

  1. Pre-heat oven to 350 degrees and grease an 8X8 pan with coconut oil. Line with parchment paper.

  2. Mix together chopped peaches, lemon juice, and vanilla extract. Set aside.

  3. In a food processor, pulse oats, pecan butter, coconut oil, coconut sugar, baking soda, vanilla extract, and salt until mealy (not a fine flour). Measure out 2/3 of the oat mixture and press into the bottom of the 8X8 pan.

  4. Drain excess liquid from peaches and toss with arrowroot. Gently press peaches into the oat bar and top with remaining oat mixture.Bake 40-45 minutes until golden brown. Allow to cool and cut into bars.
