Air Fryer Butternut Squash is easy to make to include in delicious fall salads or side dishes.  This butternut squash recipe is perfect to include in my delicious fall harvest quinoa salad.

Ingredients

  • 1 large butternut squash chopped into 1-inch cubes
  • 2 tbsp olive oil
  • sea salt to taste

Instructions

  1. Add squash to a large bowl and drizzle with olive oil.  Season with some sea salt and add into your air fryer.

  2. Cook the butternut squash in the air fryer for 20 minutes at 390F, flipping halfway.

Recipe Notes

Tips for cooking butternut squash in the air fryer:

  • do not crowd the squash and divide into two batches if necessary
  • make sure your butternut squash cubes are equal
  • flip it halfway through cooking
