Whole30 Potato Salad is a delicious recipe for summer or anytime! This easy to make recipe uses Whole30 roasted potatoes and is gluten free, paleo, dairy free and delicious!
Wash potatoes and quarter. Coat potatoes with olive oil and season with salt + pepper. Roast at 425F for 20-25 minutes, turning halfway.
Let roasted potatoes cool. Prepare dressing by whisking together all of the dressing ingredients. Set aside.
Add cooled potatoes and remaining salad ingredients to a bowl. Add dressing and coat thoroughly. Refrigerate for a few hours before serving. Reserve extra dressing if desired.
Adjust mayo, herbs + seasonings according to taste and preference. More herbs will add more flavor and more mayo will provide a creamier texture. Increase ACV and dijon mustard as necessary.
