Whole30 Potato Salad is a delicious recipe for summer or anytime!  This easy to make recipe uses Whole30 roasted potatoes and is gluten free, paleo, dairy free and delicious!

Ingredients

Salad Ingredients

  • 2 cups small potatoes quartered
  • 1 tbsp olive oil
  • 2 tbsp parsley
  • 1 tbsp dill
  • 1/2 small red onion diced

Dressing Ingredients

  • 1/3 cup Primal Kitchen Whole30 Mayo
  • 1 tbsp dijon mustard
  • 1-2 tbsp apple cider vinegar
  • salt + pepper to taste

Instructions

  1. Wash potatoes and quarter. Coat potatoes with olive oil and season with salt + pepper. Roast at 425F for 20-25 minutes, turning halfway.

  2. Let roasted potatoes cool. Prepare dressing by whisking together all of the dressing ingredients. Set aside.

  3. Add cooled potatoes and remaining salad ingredients to a bowl. Add dressing and coat thoroughly. Refrigerate for a few hours before serving. Reserve extra dressing if desired.

Adjust mayo, herbs + seasonings according to taste and preference.  More herbs will add more flavor and more mayo will provide a creamier texture.  Increase ACV and dijon mustard as necessary.
