Coconut milk chia pudding is one of my favorite make-ahead healthy breakfasts.  Creamy and delicious, this make ahead breakfast is Whole30, Keto and Paleo!

Ingredients

  • 1/2 cup coconut milk
  • 2 tbsp chia seeds

Instructions

  1. Add ingredients to a small wide-mouth mason jar. Use hand frother to mix. Let settle then mix again.

  2. Cover with lid and let sit in fridge overnight. Eat in the morning with fruit, nuts, yogurt and/or nut butter toppings.
