Make Ahead Breakfast Casserole

If you’re looking for a filling low carb breakfast, this easy low carb, Keto breakfast casserole will help!

  • 8 Eggs beaten
  • 1 carton fresh spinach
  • 4 slices Bacon
  • 4 large Sliced Mushrooms Or Veggie Of Your Choice
  • 2 tbsp Feta Cheese (Omit For Whole30 Or Paleo)
  • 1 tsp sea Salt
  • 1/4 tsp Ground Pepper


  1. Preheat Oven To 375 Degrees.Cook Bacon On Stovetop Until Desired Doneness. Save 2 TB Bacon Grease. Set Bacon Aside On Paper Towels To Absorb Grease And To Cool.

  2. Saute Spinach And Sliced Mushrooms In Bacon Grease. Set Aside.

  3. Chop Bacon Into Small Strips.Combine Eggs With Salt & Pepper.

  4. Add Veggie/Bacon Mix And Feta To A Prepared 8x8 Baking Dish. Pour Egg Mix Over Veggie/Bacon/Cheese Mix.

  5. Bake In 375 Degree Oven For 15-20 Minutes Or Until Casserole Is Golden Brown And Bubbly.
