Vegan Berry Quinoa Parfait

Vegan Berry Quinoa is an easy plant based breakfast you can make ahead.

Servings 4


  • 2 cups cooked quinoa
  • 1 cup unsweetened vanilla almond milk
  • 1 cup non dairy yogurt
  • 2 cups fresh berries
  • cinnamon


  1. Cook quinoa according to package instructions.  Divide between two mason jars. 

  2. Pour about 1/4 of unsweetened vanilla almond milk to each jar. Only add enough to just moisten the quinoa, not to cover it.

  3. Add 1/4 cup non dairy yogurt.  Top with fresh berries, cinnamon and put in the fridge overnight.  Can be enjoyed warm or cold.
