Hawaiian Pulled Pork

Summer is almost here!  This tropical pulled pork hawaiian recipe will easily become a weeknight dinner your family will love!

Ingredients

  • 1 3-4 lb pork shoulder or pork butt boneless
  • 1/2 cup soy sauce
  • 1 1/2 cups chicken broth
  • 1 cup pineapple juice
  • 3/4 cup ketchup
  • 1/4 cup coconut sugar
  • 2 tbsp minced garlic
  • 2 tsp ground ginger
  • 1 cup pineapple chopped
  • 1 tbsp arrowroot

Instructions

  1. Prepare pork by trimming much of the fat. Spray slow cooker with cooking spray and set pork into slow cooker.

  2. In a bowl mix together the soy sauce, chicken broth, pineapple juice, ketchup, coconut sugar, minced garlic, and ground ginger. Pour sauce over pork and slow cook for 8 hours on low.

  3. Once pork has cooked thoroughly and is 145F in the center as well as shreddable, move pork to a large bowl and pull.

  4. Take half of the remaining sauce and place into a medium sauce pan over medium-high heat. Combine arrowroot with 3 tbsp of water and set aside. Once sauce begins to boil, add in arrowroot mixture. Continue to boil until sauce has a barbecue sauce consistency. Add to bowl of pulled pork along with pineapple. Toss to combine.

  5. Serve on slider buns, romaine lettuce leaves or make pulled pork tacos with taco shells.
