Roasted Brussel Sprouts with Bacon

Servings 4


  • 2 pounds brussel sprouts trimmed and halved
  • 2 tsp dijon mustard
  • 2 tsp apple cider vinegar
  • 1/2 lb bacon cooked & chopped
  • 1-2 TB olive oil
  • salt & pepper to taste


  1. Preheat oven to 400 degrees.

  2. Drizzle trimmed & halved brussel sprouts with olive oil.  Add dijon mustard and apple cider vinegar and coat evenly.

  3. Salt & pepper to taste and add to a baking sheet.

  4. Roast for 15 minutes.  Flip brussel sprouts and add bacon.  Roast for an additional 10-15 minutes or until desired doneness.

Recipe Notes

If making this a Paleo-friendly (not low-carb or keto-friendly) add 2 tsp maple syrup with dijon mustard.
