Whole30 Mediterranean Chicken

  • 1 pound chicken breast
  • 1 TB olive oil
  • 1 onion sliced
  • 1 jar marinated artichokes drained & chopped
  • 1 jar sun-dried tomatoes drained & chopped
  • 2 cloves garlic minced
  • 1 bag baby spinach


  • Preheat oven to 400 degrees.
  • Place chopped veggies in a glass baking dish sprayed with cooking spray.
  • Trim chicken of fat and season with salt, pepper and italian seasoning.
  • Heat 1 TB of olive oil in a skillet over medium heat.  Once the oil is heated but not smoking, add chicken to skillet.  Brown on each side for about 4 minutes.  Transfer to glass dish and set aside.
  • Add 1 teaspoon olive oil (if needed) to skillet.  Add garlic and cook for about 30 seconds or until fragrant.  Add spinach and cook until wilted.  Add spinach to glass dish.
  • Bake chicken for about 20 minutes or until they reach an internal temperature of 165 degrees.


Recipe can be modified for different types of veggies on hand.  Mushrooms are a nice addition as are other veggies you may have.  You can also try different seasonings like greek or herbs de provence in place of italian seasoning.
