Place chopped veggies in a glass baking dish sprayed with cooking spray.
Trim chicken of fat and season with salt, pepper and italian seasoning.
Heat 1 TB of olive oil in a skillet over medium heat. Once the oil is heated but not smoking, add chicken to skillet. Brown on each side for about 4 minutes. Transfer to glass dish and set aside.
Add 1 teaspoon olive oil (if needed) to skillet. Add garlic and cook for about 30 seconds or until fragrant. Add spinach and cook until wilted. Add spinach to glass dish.
Bake chicken for about 20 minutes or until they reach an internal temperature of 165 degrees.
Recipe can be modified for different types of veggies on hand. Mushrooms are a nice addition as are other veggies you may have. You can also try different seasonings like greek or herbs de provence in place of italian seasoning.
