Sweet Potato Hash Egg Muffins

Servings 12 muffins

Ingredients

  • 12 eggs
  • ½ sweet potato shredded
  • 1 link chicken & apple sausage
  • 1 small onion diced
  • Trader Joe's Everything but the Bagel seasoning to taste
  • sea salt to taste

Instructions

  • Line a 12-muffin tin with silicone liners. Spray liners with cooking spray or olive oil spray. Place meat & veggies into liners. Scramble eggs and season  to taste.
  • Fill each muffin ¾ of the way up. Place in a 350 degree oven and bake for 20 minutes or until the tops appear cooked.
