Italian Chicken & Quinoa Soup

Ingredients

  • 1 32 oz carton low-sodium chicken broth
  • 2 16 oz cans diced tomatoes with juice
  • 1 medium onion slicked
  • 1 cup uncooked quinoa
  • 16 oz rotisserie chicken shredded
  • 2 TB basil paste
  • 2 teaspoon garlic minced

Instructions

  • Add all ingredients to Instant Pot.  Cook on soup setting for 7 minutes.  Release naturally for 10 minutes and then use release valve for remainder.  Serve immediately.
