Peach Crumble Bars have fresh peach filling between two vegan oatmeal crusts. These peach pie bars are a delicious healthy spin on traditional peach pie.

Ingredients

Oatmeal Crust Layer

  • 2 ½ cups gluten free oats
  • cup Georgia Grinders pecan butter
  • cup coconut oil
  • ¼ cup coconut sugar
  • 1 tablespoon coconut sugar for sugaring peach layer
  • 1 ½ teaspoon baking soda
  • 1 ½ teaspoon pure vanilla extract
  • ¼ teaspoon sea salt
  • ⅛ - ¼ cup oat or almond milk use as needed to bind crust

Peach Filling Layer

  • 3 large peaches finely diced
  • ½ tablespoon lemon juice
  • 1 teaspoon pure vanilla extract
  • ½ teaspoon arrowroot

Instructions

  • Pre-heat oven to 350 degrees and grease an 8X8 pan with coconut oil. Line with parchment paper.
  • Mix together chopped peaches, lemon juice, and vanilla extract. Set aside.
  • In a food processor, pulse oats, pecan butter, coconut oil, coconut sugar, baking soda, vanilla extract, and salt until mealy (not a fine flour). Measure out ⅔ of the oat mixture and press into the bottom of the 8X8 pan.
  • Drain excess liquid from peaches and toss with arrowroot. Gently press peaches into the oat bar and top with remaining oat mixture.Bake 40-45 minutes until golden brown. Allow to cool and cut into bars.
