Bacon Cheese ball with Manchego Cheese + Pistachios

This pistachio, cheese and bacon cheese ball recipe is one of my favorite new keto appetizers.  It is a low carb appetizer that is savory and perfect to take to a holiday party.

Servings 18 balls

Ingredients

  • 8 oz Neufchatel cheese softened
  • 1/3 cup nonfat Greek yogurt
  • 1 tsp onion powder
  • 1 tsp garlic powder
  • 10 slices bacon
  • 1 cup Manchego cheese shredded
  • 1/2 cup pistachios chopped

Instructions

  1. Cook bacon according to package instructions. Set aside to cool.

  2. While bacon is cooling combine Neufchatel cheese, nonfat Greek yogurt and spices with a hand mixer until well blended. Stir in Manchego cheese.

  3. Chop bacon with a food processor. Stir into cheese mixture.

  4. Allow cheese mixture to harden in fridge for 30 minutes.

  5. While cheese is in the fridge, chop pistachios in food processor until finely chopped.

  6. Using a small cookie scoop, scoop 18-22 cheese balls and roll in pistachios. Serve atop cucumbers for a low carb appetizer. Also can be served with bagel chips or crackers. Store in fridge for up to 4 days.
