Healthy No Bake Cookie Dough Bites

Healthy no bake cookie dough bites are the raw and edible cookie dough you've been craving! If you're looking for a healthy dessert recipe that is super easy to make and doesn't taste healthy, this is the one for you! Made eggless and vegan making it totally safe to eat!   • Mix up a batch of chickpea cookie dough and place it in the freezer for 10 minutes.
  • Use a small cookie scoop to scoop out approximately 20 small balls.
  • Melt chocolate and coconut oil if desired in the microwave until smooth and easily drips from a spoon.
  • Place bites into chocolate and move around with spoon until covered. Place balls on a parchment-lined plate and freeze for 10 minutes before storing in an airtight container in the refrigerator.

Notes

  • Storage: Store hardened bites in an airtight container in the refrigerator for up to 5 days.
  • Freezer: They can be stored in a freezer-safe container for up to 3 months. Allow balls to thaw for about 5-10 minutes in the refrigerator prior to eating.
  • To make nut-free replace almond or peanut butter in the original chickpea cookie dough recipe with sunflower butter or another nut-free butter option.
