Easy & Quick Carne Asada Quesadilla

10 minute carne asada quesadilla is a quick and easy way to use leftover steak or carne asada. Full of Mexcian flavors, filling, and nutritious with no marinating time!

Ingredients

  • 4 servings carne asada use leftover steak or our carne asada recipe
  • 4 burrito-sized flour tortillas
  • 1 cup shredded Mexican blend cheese
  • ½ cup salsa
  • lime for serving
  • cilantro for serving

Instructions

  • Heat a griddle or skillet over medium heat. For each tortilla add 1 serving cooked carne asada to one side of the tortilla and cover with ⅛ cup cheese. Add remaining ⅛ cup cheese to the other side of the tortilla and fold cheese-only side over steak side.
    4 servings carne asada, 4 burrito-sized flour tortillas, 1 cup shredded Mexican blend cheese
  • Allow quesadilla to cook for 2-3 minutes or until nicely browned on the bottom. Flip and cook another 2-3 minutes or until cheese is melted and tortilla is golden brown.
  • Serve with salsa and a squeeze of lime. Sprinkle with cilantro if desired.

Notes

  • Reheat: Reheat meat in the microwave or on the stove top.
  • Storage: Leftovers should be stored separately as storing together may cause the tortillas to become soggy. Store leftovers in an airtight container for up to 3 days in the refrigerator.
  • Make ahead: To make this recipe ahead, you can cook the meat and store it in the refrigerator for up to 3 days prior to making the carne asada quesadilla. Reheat in the microwave or on the stovetop prior to making the quesadilla.
