One-Pot Swedish Meatballs

Ingredients

Meatball Ingredients

  • 1 lb ground beef
  • ½ cup almond flour
  • ¾ teaspoon salt
  • 2 teaspoon garlic minced

Instructions

  • Spray the bottom and sides of the crock pot with coconut oil spray.
  • Combine ground beef, almond flour, salt, and garlic in a large bowl. Using a small ice cream scooper, scoop out about 20 meatballs.

  • Place meatballs into the crock pot. Avoid crowding the pot and leave a little space between each meatball.
  • Combine the sauce ingredients into a glass measuring cup and whisk until well incorporated. Pour over the meatballs. Cover crock pot and cook on low for 4-6 hours or until meatballs are cooked through.
    1 cup beef bone broth, 1 cup full fat coconut milk, 3 tablespoon all purpose flour, 1 tablespoon coconut aminos, ½ teaspoon dried rosemary
  • Once meatballs are cooked, season with salt and pepper to taste.

Notes

Store leftovers in an airtight container in the refrigerator for 3-4 days.
To thicken the sauce, use a slurry of 1 tablespoon cornstarch or arrowroot combined with ½ cup water.  Add the slurry to the sauce.
Serve with mashed potatoes and green beans or over egg noodles or pasta.
