Potato Soup with Kale, Bacon & Sausage

Quick to throw together in 10 minutes with just a few simple ingredients!

Heat olive oil in the Instant Pot using the Saute mode. Add the sausage and cook until it is no longer pink and cooked through. Cancel the saute mode and add sausage back to the pot.

Add in the potatoes and broth and give it a quick stir. Cover and pressure cook for 12 minutes on manual high.

Once finished, allow the Instant Pot to naturally release for 10 minutes. Then, do a quick release to alleviate the remaining pressure. Stir in kale.

Stir in heavy cream and spoon into bowls. Top with Parmesan cheese and cooked bacon and serve hot.
