This tomato soup and grilled cheese recipe is an easy instant pot recipe that will be a kid-friendly dinner! It’s one of my favorite make ahead meals that is a great healthy freezer meal.

This healthy tomato soup is great because it’s a light and healthy soup recipe that you can make ahead. Making tomato soup in the summer is great because tomatoes are in season. Crockpot freezer meals and instant pot freezer meals are a lifesaver when it’s a busy weeknight.
For this recipe I used canned tomatoes. I like to use high-quality canned tomatoes when I am making tomato soup.

The best way to make tomato soup healthy is to minimize ingredients and use fresh food! If you use canned ingredients be sure to use high-quality tomatoes. I love this instant pot tomato soup recipe because it has very few ingredients and they are high-quality!

How to Make Grilled Cheese Healthy
Let’s face it, tomato soup isn’t tomato soup without grilled cheese! It’s true, lots of bread and grilled cheese tend to be not so healthy. Here is how I made my grilled cheese healthy!
- Use less cheese
- Add in veggies like spinach or tomatoes
- Add in mashed avocado instead of cheese
- Use sprouted grain bread like Dave’s Killer Bread
- Replace butter with ghee or olive oil spray

HOW TO MAKE INSTANT POT TOMATO SOUP AND GRILLED CHEESE
FREEZER MEAL PREP INSTRUCTIONS FOR TOMATO SOUP
I learned a few things while preparing the freezer meal prep for the tomato soup. You can definitely store the frozen soup in a gallon bag. But – if you put all of the soup in one bag, you will likely not be able to fit it all in your instant pot.
I recommend splitting the frozen soup between two freezer bags. That way your entire soup will fit into the instant pot. You’re always learning new things when making freezer meal recipes!
Grilled cheese is pretty simple! Above I’ve listed out a number of ways I make it healthier. I used whole wheat bread and just a bit of cheese for this grilled cheese sandwich. Using my sandwich maker was an easy way to get these done quickly for an easy kid-friendly meal.
Here’s a great mom hack for cutting grilled cheese sandwiches. Use a pair of kitchen shears to cut the grilled cheese sandwich. Actually this works with pizza, pancakes, waffles, pretty much anything! I don’t know why it took me so long to figure this out, but it totally works!

Instant Pot Tomato Soup & Grilled Cheese Bites
This tomato soup and grilled cheese recipe is an easy instant pot recipe that will be a kid-friendly dinner! It's one of my favorite make ahead meals that is a great healthy freezer meal.
- 1 tb olive oil
- 1 onion thinly sliced
- 2 garlic cloves minced
- 2 28 oz cans whole peeled tomatoes
- 1 cup bone broth
- 1 tb raw honey
- 1 tsp Himalayan salt
- fresh ground pepper to taste
- 1/4 tsp Italian seasoning
- 1/4 tsp dried oregano
Saute onions in a pan with olive oil.
Add all ingredients to two-quart sized freezer bags.
Bags can be left in freezer for 4-6 months.
Remove bags from freezer and let sit for 10 minutes. Place into Instant Pot and cook on manual for 5 minutes. Use quick release and lift lid. Top with chopped basil, parmesan cheese and serve hot with grilled cheese bites.
