pesto adorned cauli-gnocchi

What I bought at @traderjoes to make this easy meal!
▸ haricots verts (produce section)
▸ cauliflower gnocchi (freezer section)
▸ vegan kale, cashew + basil pesto (near the cheese section)
▸ Argentinian wild red shrimp (freezer section)
▸ chili lime seasoning blend
.
AIR FRYER SHRIMP INSTRUCTIONS
∙ Defrost shrimp and pat dry.
∙ Sprinkle with chili lime seasoning + garlic powder.
∙ Cook at 400F for 6-8 minutes.

Ingredients
2 3/4 cups @bobsredmill gluten free 1 to 1 flour
1 tsp baking soda
1/2 tsp salt
1 1/4 cups butter
2 cups coconut sugar
2 eggs
2 tsp vanilla extract
1/4 cup coconut sugar
Instructions
1️⃣ Preheat oven to 350F. In a bowl sift together dry ingredients (flour, baking soda, salt) and set aside.
2️⃣ Combine butter and two cups of sugar in a stand mixer until light and fluffy. Add eggs one at a time. Add in vanilla
3️⃣ Add dry ingredients in three parts. Scrape the sides of bowl each time and mix until just blended.
4️⃣ Using a mini cookie scooper, scoop out 48 balls. Roll each ball in coconut sugar and place onto ungreased cookie sheet.
5️⃣ Bake for 8 minutes or until lightly browned on the edges. Cool on baking sheet for 5 minutes and then move to a cooling rack to cool.

 Easy to do, even for the non-cook!  So if you're on for a side on Thursday, I've got you covered!

INGREDIENTS
2 bags tri-color carrots
1 capful olive oil
salt + pepper
maple syrup
.
INSTRUCTIONS
1️⃣ Clean carrots and cut off tops and bottoms.  Slice carrots into 1-inch slices on the diagonal.
2️⃣ Drizzle with olive oil and season with salt + pepper.  Mix to combine thoroughly.
3️⃣ Roast in a 425F preheated oven for 15 minutes.  Stir carrots and roast for another 5 minutes.
4️⃣ Drizzle maple syrup over carrots directly on sheet pan.  Serve immediately.

Since it’s Thanksgiving week 🦃 not a whole lot of cooking is going to get done!  I know we’re going to get a ton of leftovers from Thursday so I don’t want to go crazy buying a ton of food!  Here is what I found in my pantry and fridge to throw together an easy meatless bowl!

@traderjoes red lentil pasta with @victoriafinefoods sauce
@giorgiofresh mushrooms sautéed with balsamic vinegar
Zucchini from @walmart
.
My sensory-sensitive family wanted their veggies separate from their pasta.  And let’s face it, it looks way prettier this way!  But to eat it I mixed it all up!

CHOCOLATE LAYER
2 TB melted coconut oil
4 TB almond butter
2 TB unsweetened cocoa powder
1 tsp vanilla extract
2 tsp stevia powder
* Combine all ingredients from Chocolate layer. Stir until smooth.
* Pour into mini muffin cups halfway. Freeze for 10 minutes.
RASPBERRY LAYER
1 small container raspberries
1 stevia packet
* Combine raspberries and stevia in a small saucepan over low heat.  Mash raspberries with a fork.
* Once raspberries are mashed, allow mixture to cool completely.
* Evenly spoon raspberries onto chocolate layer.  Freeze for 5 minutes.
ALMOND BUTTER LAYER
2 TB melted coconut oil
4 TB almond butter
1 tsp vanilla extract
2 tsp stevia powder
* Combine all ingredients from almond butter layer. Stir until smooth.
* Fill mini muffin cups the rest of the way.
* Freeze until firm.
* Store frozen. Makes approximately 12 small bombs.
