Clean Eating Easy Christmas Cookie
Flash back about 5 years ago to the time I baked 13 different types of Christmas cookies. Not one of them would be considered a healthy Christmas cookie. Despite the fact that they were absolutely delightful, having 13 different types of Christmas cookies in my house had me a little more than stuffed.
In the past few years I actually haven’t done a ton of Christmas baking aside from our traditional Christmas Eve cheesecake and maybe a few batches of Muddy Buddies. So this year, I wanted to bring back a bit of Christmas baking, but include a few healthy Christmas cookie options.
Now, let’s just be clear. There really isn’t a “healthy” Christmas cookie. I’m not sure one exists, but if you find it, please let me know ASAP!! But, there are “better for you” versions of Christmas cookies. And this is one of them 🙂
So, in this attempt to make a healthy Christmas cookie, I focused on using few ingredients and eliminating refined sugars. Voila, you have 3 ingredient peanut butter cookies! They were actually quite tasty and I’m happy that my family loved them!
The 3 ingredients were peanut butter, 1 egg, and coconut sugar. Super simple, didn’t take too long to make, and family approved.
