This healthy loaded cauliflower mash tastes like loaded potato skins without the carbs. Made with Greek yogurt, cheese, bacon, cauliflower and zucchini, it’s the perfect keto side dish alternative to mashed potatoes!
Cauliflower is so popular because it’s so versatile! Whether you’re following a low carb diet or not, loaded cauliflower mash is going to be a new fave in your house!
Loaded with bacon, cheese and cauliflower, this low carb cauliflower casserole is quite a filling dinner. I’ve also added a bit of healthy nutrition in this recipe by adding in protein-filled Greek yogurt, avocado mayonnaise and zucchini.
When it comes to mash, this mash is not mush. I like to have my cauliflower soft but not mushy.
I’ve shared my tips for perfectly steamed cauliflower below. Follow these and you’ll have a delicious loaded cauliflower casserole that is one tasty low carb dinner!
How To Make Loaded Cauliflower Mash
To get started on the keto loaded cauliflower casserole, gather up the following ingredients:
- Greek yogurt
- cooked bacon
- cauliflower
- avocado mayonnaise
- garlic
- cheese
- ranch dressing packet (not pictured)
- feel free to add in additional veggies – I added in sliced zucchini halves
Before you get started on the low carb cauliflower casserole, steam the cauliflower.
How To Steam Cauliflower
You do not need a fancy steamer basket or gadget to get deliciously steamed cauliflower. All you need is a large pot and some water.
Put approximately one cup of water into a large pot and turn on high on the stovetop. While water is heating up, clean the cauliflower and cut into florets.
Once the water is boiling, add washed cauliflower, cover and let simmer for about 4-5 minutes. Once you can stick a fork in the stem with little resistance, the cauliflower is done.
Drain the cauliflower and you will have tender (not mushy!) cauliflower that will be perfect for your loaded cauliflower casserole.
If you want to turn this recipe into a full-on loaded cauliflower mash, feel free to boil the cauliflower for a bit longer. You can then add the cauliflower to either a blender or use an immersion blender to puree.
For the purposes of this recipe, we’re going to keep the cauliflower into bites for a delicious low carb cauliflower bite casserole.

Load up Your Cauliflower for Low Carb Cauliflower Casserole
After you have your cauliflower drained you can mix it with the remaining ingredients:
- Greek yogurt
- avocado mayonnaise
- garlic
- 1/2 half cup cheese mixed in, 1/2 cup on top
- ranch dressing packet
- other veggies
- cooked bacon
Add the mixture to a casserole dish and bake for 350F for 10 or so minutes or until mixture is bubbling and browning slightly on top.
I topped mine with some fresh cut green onions!

- 1 cup shredded cheese
- 1 head cauliflower
- 1 zucchini
- 2 tsp garlic
- 1/2 packet Primal Palate Ranch Seasoning Mix
- 6 slices bacon cooked

Casserole Instructions

Mixed cooked cauliflower remaining ingredients (half of the cheese). Top casserole with remaining half of cheese.
