Keto Thanksgiving Recipes
Move over turkey & stuffing, Keto pork tenderloin is here! Thanksgiving means comfort food and ooey-gooey goodness! I love that the keto diet is cheese-friendly! Both the keto pork tenderloin and keto roasted parmesan broccoli have cheese that makes these keto Thanksgiving recipes that much more delicious!
Keto Pork Tenderloin Stuffed with Spinach & Cheese
The ALDI Products that I used for the keto pork tenderloin were:
Half Pork Loin
Simply Nature Organic Baby Spinach
Happy Farms Preferred Cheddar Gruyere
Keto Roasted Stuffed Pork
- 2 lb pork loin
- 1/2 block Happy Farms Preferred Cheddar Gruyere Cheese shaved
- 1/3 container Simply Nature Organic Spinach
- drizzle Simply Nature Organic Extra Virgin Olive Oil
- salt & pepper to taste
Preheat oven to 375 Fahrenheit. Prepare a cast iron skillet with a drizzle of olive oil. Prepare a roasting pan for later and set aside.
Cut pork loin in half length-wise. Salt & pepper both sides of the loin generously.
Layer inside of the pork loin with spinach and then cheese.
Carefully roll the pork loin and secure with toothpicks.
Turn cast iron skillet to high heat.
Once oil in skillet is shimmering (not smoking), place pork loin down. Sear on each side for 3 minutes.
Add pork loin to a roasting pan and roast for 15 minutes or until cooked through (usually 140-150 degrees Fahrenheit).
Let pork rest for 10 minutes tented under foil. Discard the toothpicks. Slice pork and serve immediately.
Keto Roasted Parmesan Broccoli
The ALDI products I used for the parmesan broccoli:
Happy Farms Preferred Mediterranean Parmesan Cheese
Stonemill Minced Garlic
Keto Roasted Broccoli
- 1 bunch fresh broccoli
- 1/3 cup Happy Farms Preferred Mediterranean Parmesan cheese shredded
- 2 tsp Stonemill Minced Garlic
- 1 TB olive oil
- salt & pepper to taste
Preheat oven to 400 degrees.
Clean broccoli and cut into florets.
Add broccoli to a bowl and drizzle broccoli with olive oil.
Add garlic and cheese and mix until well coated.
Roast at 400 degrees for 20 minutes. Flip broccoli and roast for an additional 10 minutes. Serve immediately.
Keto pork tenderloin stuffed with spinach and cheese is the perfect alternative to the usual Thanksgiving turkey.
