White Bean Tomato Kale Salad with Prosciutto is a fresh spring salad that works perfectly for an easy weeknight dinner salad or side. White beans, prosciutto, goat cheese and farro make this easy salad filling and incredibly flavorful!

Kale Tomato Salad
An easy dinner salad packed full of flavor and freshness are one of my favorite weeknight meals. This kale tomato salad is no exception!
Aside from using fresh ingredients like kale and NatureSweet Cherubs, this salad packs a ton of flavor and fiber with farro, white beans, prosciutto and goat cheese.
This dinner salad is also a great salad to prep earlier in the day before eating. By massaging the kale and letting it sit for a few hours in the fridge, all of the flavors really come together.
Ingredients You Need to Make this Recipe
Here are the ingredients you need to make this salad:
- Kale
- Olive Oil
- Farro: Quinoa, orzo or bulgur also work well
- NatureSweet Cherubs: Deliciously sweet and the perfect pop of freshness in this salad.
- White Beans
- Salt & Pepper
- Goat Cheese
- Prosciutto
- Lemon for serving
How to Make this Recipe
Here are the steps to making this recipe:
Start by massaging the kale. Add some of the olive oil to the kale along with salt & pepper. Gently massage for a few minutes or until kale softens.
Add NatureSweet Cherubs to massaged kale.
Add remaining ingredients, except for prosciutto, and gently mix.
Add a squeeze of lemon and flaky sea salt for topping.
Chop prosciutto into bite sized pieces or add it to the salad in little nests.

White Bean Tomato Kale Salad with Prosciutto
Ingredients
- 4 cups kale
- 3-4 tablespoon olive oil
- 1 cup cooked farro
- 1 container NatureSweet Cherubs
- 1 15- oz can white beans rinsed
- salt & pepper to taste
- 4 oz goat cheese
- 4 oz prosciutto
Instructions
- Add 3 tablespoon olive oil to the kale along with salt & pepper. Gently massage for a few minutes or until kale softens.
- Add NatureSweet Cherubs to massaged kale.
- Add remaining ingredients, except for prosciutto, and gently mix.
- Drizzle additional 1 tablespoon olive oil and add a squeeze of lemon and flaky sea salt for topping.
- Chop prosciutto into bite sized pieces or add it to the salad in little nests.
