Picky eaters? I’ve got two of them. Being a food blogger it makes it rather challenging when I’m trying a new recipe and I have two littles who won’t even try it!
Granted, they both have come a long way. My eight year old will at least try things now. If she doesn’t like it, she will tell you 🙂 My five year old still lives in the “I don’t like the way it looks so I don’t like it camp.”
I’m not sure why repurposing, repositioning, and renaming food makes it kid-friendly. But for some reason, when I think like a kid, they are way more open to try (and even liking!) the new foods I make for them.
I took basic flavors and ingredients I know they like (cheese, ranch, chicken) and made them into a new shape and for them a new name (chicken rollups :))

Hidden Veggies for Picky Toddlers + Kids
I was nervous about having them be the guinea pigs for my homemade taquitos recipe. Not only is it made with Greek yogurt, chicken and ranch seasoning, but I also found a way to sneak some veggies in there!
Sometimes hidden veggie recipes can be the only way to get veggies into your picky toddler. I know, I’ve been there (and still am at times!)
This recipe hides nutritious carrots! I made sure to chop them up teeny tiny using a food processor.
After adding them to the Greek yogurt dip (no one has to know it’s Greek yogurt, right??) you would have no idea they are in there. I feel good that this is an easy healthy recipe that my kids will eat!

Tips for cooking chicken taquitos in the air fryer
I went through a few versions of this recipe before settling on one that is foul-proof! Here are a few tips and tricks for making homemade taquitos in the air fryer a breeze!
- Be sure to mix the chicken with the Greek yogurt dip. Don’t layer them in the tortilla, the chicken will dry out.
- Don’t overstuff the taquitos – they are harder to roll and don’t heat through thoroughly.
- Spray the end of the tortilla with a bit of cooking spray to seal the taquito.
- Place taquitos in seam-side down.

Homemade Taquitos
Homemade taquitos are easy to make in the air fryer! This chicken recipe is a kid-friendly healthy recipe that is great for picky eaters.
Ingredients
- 2 cups rotisserie chicken cooked
- 2 carrots diced extra fine
- 1/2 packet southwestern ranch dressing packet
- 1 cup Greek yogurt
- 3/4 cup shredded cheese divided
- 10 low carb thin tortillas
Instructions

Prepare 1/2 Greek yogurt dip according to package directions. You may prepare the entire amount and reserving 1 cup of dip for dipping sauce or veggie dip.

Clean carrots and dice using a food processor. Dice extra fine for a smoother texture. Add carrots and 1/2 cup cheese to Greek yogurt dip to combine.

Chop rotisserie chicken into small, bite-sized pieces. Combine with 1 cup of Greek yogurt dip and carrots.

Add 1/4 cup chicken mixture tortilla. Top with 1 tbsp shredded cheese. Roll tortilla tightly and spray end with a bit of cooking spray to hold seal.

Cook in air fryer at 370F for 8 minutes, checking halfway. Taquitos will be done when they are golden brown.

Use remaining Greek yogurt dip as dipping sauce or drizzled on top. Garnish with cilantro if desired.
Recipe Notes
Use buttermilk ranch instead of southwestern ranch seasoning for a more mild flavor. Taquitos may be frozen for up to 3 months and reheated in air fryer. Cook at 400 for 15 minutes, flipping halfway.
