It’s summer and although most nights are filled with less activities, we are still busy!
One thing I know is that I do not want to spend a ton of time in the kitchen! If we’re not grilling, I’m looking for an easy 30 minute recipe to have dinner done quickly!
During the summer I also like to eat lighter! Usually that means a healthy protein and some veggies.

I’m very picky about the seafood I eat! When I’m selecting seafood, I look for the following:

Gorton’s Natural Catch Grilled Salmon fits all of these! I grabbed some of the classic style salmon to create a fresh and delicious sheet pan salmon with veggies.
Using summer veggies like zucchini and asparagus, I created an easy sheet pan dinner with salmon topped with lemon and some sweet potato chips.
It is super easy to make and done in no time. Using staple summertime ingredients made this frozen seafood dinner incredibly fresh.
How to Make This Gorton’s Seafood Recipe for Salmon + Veggies
To make this easy weeknight meal gather up a few of your favorite veggies and some Gorton’s Natural Catch Salmon.
I used a mandolin to thinly slice the zucchini and sweet potatoes. After washing the produce I drizzled them with olive oil and seasoned them with salt and pepper.
From there I gave the veggies a 5 minute head start in a 400F oven while I got the salmon ready.
I topped the salmon with lemons and added it to the sheet pan. In about 15-17 minutes, dinner is ready to go!
Gorton's Natural Catch Salmon + Veggie Sheet Pan
- 2 packages Gorton's Natural Catch Grilled Salmon
- 1 bunch asparagus
- 1 large zucchini sliced thin, about 2 mm
- 2 medium sweet potatoes sliced thin, about 1 mm
- olive oil
- flaky sea salt
- 4 lemon slices
- Preheat oven to 400F
- Wash and prepare all produce. Drizzle with olive oil and season with sea salt. Add to sheet pan prepared with cooking spray.
- Let veggies cook for 5 minutes while you slice lemons and remove salmon packaging.
- Add salmon topped with lemons to sheet pan and cook for additional 15-17 minutes or until an instant read thermometer shows 165F.
