Homemade Perfect Bar
My fave snack hands down – Perfect Bars. I’ve scouted the best prices, tried all the flavors, they are just so good! I was on a mission to create a perfect bar copycat at home (which I did and posted earlier this year!)
Since the holiday seasons are upon us, I figured it would be fun to create a homemade perfect bar recipe that mimicked one of my favorite holiday flavors, gingerbread! With just a few simple ingredients I was able to create a delicious seasonal perfect bar that definitely satisfies my craving!

📋 Ingredients – What You Need to Make Gingerbread Snack Bars
Here is what you need:
For the homemade perfect bars you need:
- molasses: black strap molasses which has lots of nutrients (but isn’t overly sweet).
- coconut flour: helps to bind the perfect bars along with…
- protein powder: Your favorite protein powder here works! Note that you want to use true protein powder, not collagen protein powder as it is too fine and will not enable the bars to hold.
- almond butter: cashew butter and peanut butter would also work excellent here. I highly recommend Georgia Grinders (use code LYNDSEY20 for a discount!)
- spices: I air on the side of more spices for this gingerbread bar. In addition to nutmeg, cinnamon and cloves, I also added a healthy dose of pumpkin pie spice.
- almond milk: add the almond milk in over time until you get a perfect bar consistency – if your bar is crumbling, add more little by little.
- holiday sprinkles: not necessary but you definitely shouldn’t skip these!
- honey: (optional and not pictured): these gingerbread bars are not overly sweet so if you like things on the sweeter side (I do!) add in a tbsp or two of raw honey
🔪 Instructions – How to Make Gingerbread Perfect Bars
Here is how you make it!
1. Create the almond butter base: Mix the almond butter and black strap molasses.
2. Dry ingredient add: Add in the remainder of the ingredients (except for the almond milk.)
3. Add in the almond milk: Slowly add in almond milk until you get perfect bar consistency. Add slowly, you can always add more.
4. Make those bars! Press bar mixture into an 8X8 glass dish lined with parchment paper. Press sprinkles into bars and refrigerate for at least one hour.
💭 Helpful Tips – How to Make the Perfect Perfect Bar!
Here are my best pro tips for making perfect bars at home!
- Go slow with the almond milk and add as necessary. You may use anywhere from 1/4 to 1/2 cup of almond milk as it depends on the moisture level of both your protein powder and the nut butter you select.
- Use the bottom of a measuring cup for evenly flattening out the tops of the perfect bars.
How to Store Perfect Bars
Perfect bars are best stored in the fridge in an airtight container. Freezing perfect bars is also a great option if you want to have them later or freeze one and throw it in your lunch bag so it’s an edible temperature in time for lunch.

- 1 tbsp coconut flour
- 2 tbsp molasses
- 1/4 - 1/2 cup almond milk
- 1/4 tsp cloves
- 1 tbsp cinnamon
- 2 tsp ginger
- sprinkles
