I use these delicious recipes and meal plans to create a menu of my family's favorite meals.

Tips for Making Healthy Meals for February
If you are missing the fresh fruit and veggies of summer, check out frozen fruit and veggies (we use them in our ground chicken stir fry and our honey garlic chicken thigh recipe!)
Frozen veggies have the best fresh flavor when fresh is not available - especially green beans!
Frozen meat sales are great to stock your freezer! Different cuts of meat like frozen chicken thighs may be on sale and work well in casseroles and soups!
I also like to purchase pulled rotisserie chicken and freeze it. It works well as a lean meat with protein to add to salads, soups, and casseroles.
You can also look for sales on cold items that store well like cheddar cheese, sour cream, eggs, and Greek yogurt.
Grocery shopping during store sales and stocking up your pantry during February is always a good plan! I like to have items like brown rice, canned tomatoes, pasta, olive oil, and other dry goods on hand for making quick meals.
The Benefits of Monthly Meal Planning
Sticking to a monthly meal plan can help to save time and money! Sometimes a little bit of planning pays off!
By shopping for an entire month of frozen and pantry groceries at a bulk store like Sam's Club or Costco, cooking at home will be easier and mean fewer trips to the grocery store in winter weather!
Monthly meal planning requires making only one grocery list. Shopping in bulk for pantry items for the whole month will help to save money and help you manage a busy lifestyle.
Planning for a couple of weeks or using weekly meal plans can be helpful too! With busy schedules, a weekly meal plan can help to cut down on food waste.

February Meal Plan Tips
- Just like in January, cozy meals work so well during the cold winter months! We still love to eat delicious meals like soups and casseroles and use our Instant Pot, slow cooker, and Air Fryer in February.
- You can move recipes within each week's meal plan or move your favorite meal around to accommodate your schedule.
- Each day has a main meal or a main dish. You can select a side dish to add to each meal.
- Make a swap of ingredients if you want! Use ingredients your entire family will eat.
- One day is left blank each week to account for leftovers (like our leftover turkey noodle soup!) or eating out.
- You'll see repeats from our January meal plan and new meals to try.
- All of these recipes have easy prep instructions making them perfect meals for busy weeknights!

Try These Swedish Meatballs for An Easy Meal!
One-Pot Swedish Meatballs
Equipment
- ice cream scoop
Ingredients
Meatball Ingredients
- 1 lb ground beef
- ยฝ cup almond flour
- ยพ teaspoon salt
- 2 teaspoon garlic minced
Sauce Ingredients
- 1 cup beef bone broth
- 1 cup full fat coconut milk
- 3 tablespoon all purpose flour
- 1 tablespoon coconut aminos
- ยฝ teaspoon dried rosemary
- salt and pepper to taste
Instructions
- Spray the bottom and sides of the crock pot with coconut oil spray.
- Combine ground beef, almond flour, salt, and garlic in a large bowl. Using a small ice cream scooper, scoop out about 20 meatballs.1 lb ground beef, ยฝ cup almond flour, ยพ teaspoon salt, 2 teaspoon garlic
- Place meatballs into the crock pot. Avoid crowding the pot and leave a little space between each meatball.
- Combine the sauce ingredients into a glass measuring cup and whisk until well incorporated. Pour over the meatballs. Cover crock pot and cook on low for 4-6 hours or until meatballs are cooked through.1 cup beef bone broth, 1 cup full fat coconut milk, 3 tablespoon all purpose flour, 1 tablespoon coconut aminos, ยฝ teaspoon dried rosemary
- Once meatballs are cooked, season with salt and pepper to taste.salt and pepper
