Instant Pot Chicken Chili

It’s finally fall!  With chilly temperature on the way, it’s time to start making one of my favorite meals, chili!

Soup is one of the Best Healthy Comfort Foods!

Soup is one of my favorite things to have when the weather turns cold.  Turns out that most of the Instagram community agrees!  When I polled my followers on my stories last week, soup (namely chili) was high on the list of favorites!

What makes this chili recipe healthy?

Chili is a pretty healthy soup recipe!  What makes this chicken chili recipe healthy, is you guessed it, chicken!  Swapping out beef for chicken keeps the protein with a fraction of the fat.

This chicken chili is incredibly flavorful and delicious.  If you are looking for family friendly healthy recipes, this is definitely one to try!

What Ingredients You Need for this Healthy Classic Chili Recipe

Ingredients for Instant Pot Chicken Chili

The ingredients for Instant Pot Chicken Chili are so similar to a classic chili recipe.  The only difference is you use ground chicken instead of ground beef!

  • olive oil
  • onion
  • ground chicken
  • chili powder
  • Spices like cumin, chili powder, salt + pepper
  • raw honey
  • tomato paste
  • beef bone broth
  • diced tomatoes
  • kidney beans
  • tomato sauce

How to Make Healthy Classic Chili Using Ground Chicken

The nice thing about this classic chili recipe is that it can be made with a variety of kitchen tools!  I’ve included both the instant pot and crockpot/slow cooker instructions for you!

How to Make a Healthy Instant Pot Chili Recipe

The instant pot is one of my favorite tools to make weeknight meals!  You can also take this chili straight from the freezer to the instant pot.

  1. Turn instant pot to saute function.  Cook onions in olive oil until slightly browned and translucent.
  2. Add ground chicken and cook until no longer pink or an instant-read thermometer reads 165F.
  3. Add in remaining ingredients and set instant pot for 20 minutes on bean/chili function.  Allow to release naturally or quick release.

How to Make Healthy Chili in the Slow Cooker or Crockpot

You can make this instant pot chicken chili in the slow cooker as well!  Follow these directions for a delicious classic chili that is healthy!

  1. Saute onions in olive oil over medium heat.  Cook onions in olive oil until slightly browned and translucent.
  2. Add ground chicken and cook until no longer pink or an instant-read thermometer reads 165F.
  3. Add in remaining ingredients and cook on low for 6-8 hours or on high for 3-4 hours.

Ingredients

  • 1 tbsp olive oil
  • 1 medium onion chopped
  • 1 lb ground chicken
  • 1 tbsp chili powder
  • 1 tbsp cumin
  • 1 tsp salt
  • 1 tsp pepper
  • 1 tbsp raw honey
  • 2 cups beef bone broth
  • 6 oz tomato paste
  • 1 can kidney beans drained
  • 1 8 oz can tomato sauce

Instructions

  1. Saute onions in olive oil over medium heat.  Cook onions in olive oil until slightly browned and translucent.

  2. Add ground chicken and cook until no longer pink or an instant-read thermometer reads 165F.

  3. Add in remaining ingredients and cook on low for 6-8 hours or on high for 3-4 hours.
