There is nothing I like more than cheese.  OK, maybe bacon.  Put cheese and bacon together into a mini appetizer and I’m hooked!

One of the hardest things about holiday parties for me is not eating everything in sight.  Let’s face it, I love food and I love trying new things.

One of the things I do to help me navigate holiday parties is to bring something!  This bacon cheeseball recipe is perfect because it’s low carb and one of my favorite delicious keto appetizers.

Even if you aren’t doing the ketogenic diet, eating low carb can be helpful when you want to balance out your diet.  For me, that means filling up on meats and low carb veggies and saving my carbs for what I like most – dessert!

  • some type of soft cheese such as cream cheese or Neufchatel
  • sour cream or Greek Yogurt
  • spices (depends on what kind you are making but onion powder, garlic powder and pepper are standard go-to spices)
  • a harder shredded cheese (this bacon cheeseball recipe uses Manchego cheese)
  • some kind of coating (i.e. chopped nuts)

How Long Can a Cheeseball Keep in the Refrigerator?

How long to store a cheeseball in the fridge depends on what ingredients you’ve put into it.  For this particular recipe, you may be wondering how long does cooked bacon last in the fridge?

According to Still Tasty, cooked bacon lasts in the fridge for 4 to 5 days.  Check the remainder of your ingredients expiration dates and judge accordingly.

How to Make a Bacon Cheese Ball?

Bacon Cheese ball with Manchego Cheese + Pistachios

This pistachio, cheese and bacon cheese ball recipe is one of my favorite new keto appetizers.  It is a low carb appetizer that is savory and perfect to take to a holiday party.

Servings 18 balls

Ingredients

  • 8 oz Neufchatel cheese softened
  • 1/3 cup nonfat Greek yogurt
  • 1 tsp onion powder
  • 1 tsp garlic powder
  • 10 slices bacon
  • 1 cup Manchego cheese shredded
  • 1/2 cup pistachios chopped

Instructions

  1. Cook bacon according to package instructions. Set aside to cool.

  2. While bacon is cooling combine Neufchatel cheese, nonfat Greek yogurt and spices with a hand mixer until well blended. Stir in Manchego cheese.

  3. Chop bacon with a food processor. Stir into cheese mixture.

  4. Allow cheese mixture to harden in fridge for 30 minutes.

  5. While cheese is in the fridge, chop pistachios in food processor until finely chopped.

  6. Using a small cookie scoop, scoop 18-22 cheese balls and roll in pistachios. Serve atop cucumbers for a low carb appetizer. Also can be served with bagel chips or crackers. Store in fridge for up to 4 days.
