Zoodles & Kale Soup with Sausage

It doesn’t seem to matter what time of year it is, soup is always a good idea!  It seems like the Instagram community tends to agree with me!  I don’t know about you, but one of my favorite things about fall is breaking out my slow cooker (or my new Ninja Foodi which I love!) and slow-cooking some delicious soup!

Since summer usually brings an abundance of zucchini, I decided to bump up the veggie factor and add in some zoodles.  To be fair, I intended on adding diced zucchini but I got a little carried away with my spiralizer and turned all of my zucchini into noodles.  I actually think this mistake is kind of brilliant because when you put them in sauce or soup, zoodles taste a lot like noodles to me!  Maybe this trick will even fool the kids?

How to Make Kale Soup with Sausage

This soup is an easy healthy soup to make on the stove, in an instant pot, or in your slow cooker.  I’ve included directions for all three below.  The first thing you’ll want to do to make soup is to gather your ingredients.

Zoodles & Kale Soup Ingredients

I like to add in veggies and swap for healthy ingredients when I can.  Adding in zoodles instead of tortellini or pasta bumps up the veggie factor.  It also is lower in carbohydrates if you are looking for a low carb soup recipe.

I also like to use turkey sausage in place of pork sausage.  I opted for turkey sausage over chicken sausage for this recipe because I like the sausage to be in crumbles and I find it hard to create that with chicken sausage.

Here are the ingredients I used to this kale soup recipe:

  • 1 pound sweet Italian turkey sausage
  • olive oil
  • 1 cup chopped onion
  • 2 cloves garlic
  • 5 cups beef bone broth
  • 2 cans diced tomatoes
  • 3 large carrots, shaved
  • 1 container baby kale
  • 1 TB fresh basil
  • 1/2 tsp dried oregano
  • 1 8-oz can tomato sauce
  • 1 large zucchini, spiralized
  • parmesan cheese for topping
  • salt & pepper

Zoodles & Kale Soup with Sausage

This Kale Soup with Sausage is a delicious and easy weeknight meal for fall.  Your family will love this healthy fall soup that can be made in the slow cooker, instant pot or on the stove!

Servings 8

Ingredients

  • 1 pound sweet Italian turkey sausage
  • 1 tbsp olive oil
  • 1 cup chopped onion
  • 2 cloves garlic
  • 5 cups beef bone broth or beef stock
  • 2 cans diced tomatoes
  • 3 large carrots
  • 1 container baby kale
  • 1 tbsp basil
  • 1/2 tsp dried oregano
  • 1 8-oz can tomato sauce
  • 1 large zucchini spiralized
  • 1/4 cup parmesan cheese
  • salt & pepper to taste

Instructions

Stove Top Instructions

  1. In a 5-quart soup pot or Dutch oven, brown sausage in olive oil. Remove sausage and set aside.

  2. Saute onions and garlic in drippings (it should be minimal if you used turkey sausage). Stir in beef stock, tomatoes, carrots, basil, oregano, tomato sauce and sausage. Bring to a boil. Reduce heat and simmer uncovered for 30 minutes.

  3. Stir in zoodles. Simmer covered for 30 minutes. Season with salt & pepper and add parmesan cheese for serving

Instant Pot Directions

  1. Follow Stove Top Directions until boil. Add ingredients to instant pot.

  2. Place lid on the top of the instant pot, turn valve to sealing, and select manual high pressure for 2 minutes. Once the cook time is over, allow instant pot to naturally release for 10 minutes before opening the lid.

  3. Add in kale and allow it to sit in pot for a few minutes to wilt. Season with salt & pepper to taste and top with parmesan cheese if desired.

Slow Cooker Instructions

  1. Follow Stove Top Directions until boil. Add ingredients to slow cooker.

  2. Cook on low for 6-8 hours.Add in kale and allow it to sit in pot for a few minutes to wilt. Season with salt & pepper to taste and top with parmesan cheese if desired.

Kale Soup with Sausage Instant Pot Directions

  1. Turn the instant pot to saute function and add the olive oil. Brown sausage until cooked through.  Remove from heat and set aside.
  2. Add chopped onion and garlic to sausage drippings (there shouldn’t be a ton if you used turkey sausage) and cook onions until caramelized.
  3. Add in beef broth, tomatoes, carrots, basil, oregano, tomato sauce, zoodles and sausage.
  4. Place lid on the top of the instant pot, turn valve to sealing, and select manual high pressure for 2 minutes.
  5. Once the cook time is over, allow instant pot to naturally release for 10 minutes before opening the lid.
  6. Add in kale and allow it to sit in pot for a few minutes to wilt.
  7. Season with salt & pepper to taste and top with parmesan cheese if desired.

Kale Soup with Sausage Slow Cooker Directions

  1. In a skillet, brown sausage until cooked through.  Add to slow cooker.
  2. Add chopped onion and garlic to the drippings (there shouldn’t be a ton if you used turkey sausage) and cook onions until caramelized.  Put into slow cooker.
  3. Add beef broth, tomatoes, carrots, basil, oregano, tomato sauce, and zoodles to slow cooker.
  4. Cook on low for 6-8 hours.
  5. Add in kale and allow it to sit in slow cooker for a few minutes to wilt.
  6. Season with salt & pepper to taste and top with parmesan cheese if desired.
