Overnight baked french toast is an easy healthy breakfast that the pickiest kid will love! This easy recipe is perfect for busy weekdays and is a healthy breakfast for kids.  This easy french toast recipe can be made ahead or the morning of – and leaves leftovers for breakfast all week!

There is nothing I like more than the lazy mornings of summer.  And by lazy I mean that I don’t have to rush anyone off to school.  Truth be told, I still get up at the same time and have the same morning routine for myself during the summer.  But I LOVE with a capital L that I don’t have to drag two kids out of bed and get them ready for school.

One thing that can be challenging during the school year is to get a healthy, filling breakfast in!  My kids love to sleep in so feeding them breakfast is a challenge before we have to get out the door.  I also am not a huge fan of creating tons of recipes during the week.

French toast can be healthy!  Here are a few simple swaps I used for this overnight french toast casserole that made it healthy.

  • swapped out white bread for Dave’s Killer Bread
  • used almond milk instead of dairy milk
  • replaced sugar with raw honey
  • swapped out brown sugar for stevia powder
  • added in healthy and fresh fruit.  Below I’ve shared a few ideas to add seasonal fruit to your healthy french toast.

  • Spring:  Cherries, Mango, Strawberries
  • Summer:  Cherries, Blackberries, Blueberries, Strawberries, Peaches, Pears, Raspberries
  • Fall:  Apples, Cranberries, Pears, Pumpkin
  • Winter:  Dates, Papaya, Pears
  • Year Round:  Apples, bananas

Overnight Baked French Toast

Overnight baked french toast is an easy healthy breakfast that the pickiest kid will love! This easy recipe is perfect for busy weekdays and is a healthy breakfast for kids.  This easy french toast recipe can be made ahead or the morning of – and leaves leftovers for breakfast all week!

Prep Time 10 minutes
Cook Time 39 minutes
Servings 12

Ingredients

  • 1 loaf sprouted grain bread
  • 8 eggs
  • 2 cups unsweetened vanilla almond milk
  • 1/4 cup raw honey
  • 1/4 cup stevia powder
  • 1 tb vanilla extract
  • 2 tsp cinnamon
  • 1/4 tsp pumpkin pie spice
  • 3 cups fresh strawberries diced

Instructions

  1. Spray a 9X13 pan with cooking spray. Preheat oven to 350F.

  2. In a large bowl, add eggs, milk, raw honey, stevia, vanilla and spices. Mix until well combined.

  3. Chop bread into small cubes. Put bread into bowl with egg mixture and mix well until all liquid is absorbed.

  4. Pour the french toast mixture into the prepared pan. Bake for 45-50 minutes or until the center is no longer wet.

  5. Overnight instructions for make-ahead french toast casserole: Place prepared dish into fridge overnight. Remove from fridge in the morning to bake.
